Clean Eating

I am slowly altering my eating habits with my family. My inspiration is from Ashley Farr (fitness queen) and from various others.

Mini Chili Biscuit Bowls

Inspired by my Visiting Teacher. She gave me the idea and immediately after she left I tried to create based on her verbal description.


Ingredients:
  • Can of chili (vegetable or meat)
  • Can of biscuits (preferably the large flaky biscuits)
  • Shredded cheese (Cheddar or Colby or whatever you like)
Directions:
    • BISCUITS
  • Set oven temperature to instructions on can of biscuits
  • Separate biscuits on a cookie sheet or pan
  • Peel bottom layer off of individual biscuit and place back on cookie sheet
  • Cut hole (like a doughnut) in larger biscuit portion
  • Place "doughnut" neatly on top of bottom layer on cookie sheet
  • Place "doughnut hole" pieces on a separate cookie sheet
  • Repeat for remaining uncut biscuits
  • Space out enough that biscuits do not touch
  • Bake both cookie sheets of dough
  • Watch that small "doughnut hole" pieces do not overcook
  • When cooked, remove from oven and let cool
    • CHILI
  • Open can of chili and place in small pot or microwave (*follow can's instructions)
  • Spoon out proportional amount of chili into biscuit
  • Cover with shredded cheese
  • Place "doughnut hole" piece on top

Butter Cookies


Ingredients:

  • 3 sticks salted butter
  • 1.25 c sugar
  • 3.5 c flour
  • 2 eggs
  • 1 tsp vanilla
  • .25 tsp cinnamon
  • *optional: chocolate chips and/or walnuts

Directions:

  • Set oven
  • Cream butter & sugar
  • Mix in flour
  • Separately mix eggs, vanilla, cinnamon
  • Combine all
  • Roll into small balls on ungreased cookie sheet
  • Bake
  • Remove and set on plate or cooling rack
